QUESTION AS A NEWCOMER: What am I ALLOWED to write about?

My first book is about whether or not infant baptism "saves." Is it okay to write about what I discovered or should I only write about abstract things?

That is up to you, no one can decide that for you.  As that cannot proved either way it would be up to the reader to decide if they agreed with your argument.
